About
Ethereal Brewing is a Lexington craft brewery in the Distillery District, on the 25-acre site of the historic James E. Pepper Distillery, which made bourbon from 1879 until the property was abandoned in 1958 and left untouched for nearly 50 years. Ethereal was only the second business to open there. Its roots trace to Andrew Bishop, who visited family in Northwood, Iowa, found his uncle brewing at a small brewery called Worth Brewing, and decided to open one of his own; he later partnered with Brandon Floan, who was drawn to the science of brewing. The beer list has included Muffin Man, a blueberry muffin sour that became a flagship at regulars’ urging; Wanderland, a West Coast IPA; Throwback, a classic American pilsner; Unemployment Lime, a key lime sour; and The Jabberwock, a bourbon barrel-aged English barleywine. Ethereal also runs a public house and a pizza slice house.
